Easy One Pot Pasta

Easy One Pot Pasta
This easy one pot pasta is so simple to make to make plus it works so well as left overs for the next day.


  • 200g mushrooms sliced
  • 400g mixed tomatoes sliced
  • ½ cup of coconut cream
  • 2 tablespoons of basil pesto
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • 2 tablespoons of nutritional yeast
  • 1 block of firm tofu sliced into your desired size
  • 20g basil fresh
  • ¼ cup of olive oil
  • 90g of vegan cheese grated
  • 1 head of garlic
  • 150g of Orgran Buckwheat Pasta Spirals
  • Squeeze of lemon


  1. Place your garlic in an oven proof dish and with a dash of olive oil and bake in the oven until soft for about 15 minutes. While the garlic cooks add some olive oil to your pot and heat.
  2. Add in the tofu, tomatoes, mushrooms, and some sprigs of basil.
  3. Sauté and cook until mushrooms and tomatoes are soft.
  4. Place your Orgran pasta on the stove to cook.
  5. Back to the tomato tofu mix, add the coconut cream and 3 tablespoons of basil pesto as well as the spices and mix. Add in your cooked Orgran pasta and mix.
  6. Add to the pasta the garlic cloves and sprinkle your vegan cheese on top.
  7. Place in the oven to bake for a further 10 minutes until cheese is melted.
  8. Serve with some toasted almond slices and fresh basil.
