Vegan Omelette

Ingredients
- 50g Orgran easy egg
- 2 tbsp coconut oil
- 240ml filtered water
- Baby tomatoes
- Avocado
- Red onion
- Baby spinach leaves
Directions
- Whisk together in a bowl and place in a pan over medium heat
- Lift the sides to make sure it doesn’t stick and cook for another 4 minutes.
- Add filling and serve with a fresh slice of sourdough.
