Red Pepper Pesto Pasta

Ingredients

  • 1 serving Orgran buckwheat spirals
  • 1 cup fresh cherry tomatoes
  • 30g red pepper pesto (recipe below)
  • Handful chopped walnuts
  • Grated Parmesan / mock Parmesan cheese
  • Handful of fresh basil

Method

To make Red pepper Pesto

  1. 2 roasted red peppers
  2. 1 tbsp garlic
  3. 1 handful cashew nuts
  4. Drizzle of olive oil
  5. Season to taste
  6. Blend in high speed blender for 60 seconds

To make pasta

  1. Cook buckwheat spirals in lots of water for 8-10 minutes
  2. Drain immediately and stir in pesto
  3. Top with cherry tomatoes, fresh basil and parmesan
