Mandarin and Orange Upside down Cake

  • 8 Mandarins, peeled and sliced
  • 2 tbs Vegan butter
  • 2 tbs Caster Sugar
  • 1 cup Almond Milk
  • 1 tbs Apple Cider Vinegar
  • 2 tsp Vanilla Essence
  • 1/3 cup Vegetable Oil
  • 1 & 3/4 cups Orgran Gluten free Plain flour
  • 2 tsp Baking Powder
  • Pinch Salt
  • 1 cup brown sugar

To Serve:

  • 2 tbsp Orange Marmalade
  • Fresh Mint Leaves
  • Crushed pistachios


  1. Preheat the oven to 180°C and line a cake tin.
  2. Rub the butter around the edges and sprinkle with caster sugar.
  3. Place the mandarin slices cut side down in the tin, fill any gaps with smaller pieces.
  4. For the cake batter: combine the almond milk and the apple cider vinegar and set aside.
  5. Combine the dry ingredients in a large bowl.
  6. Add the milk mixture, the oil and the vanilla.
  7. Pour into the cake tin and bake for 35 minutes until golden and cooked through.
  8. Once baked, allow to cool for 5 minutes and then remove from the tin.
  9. Top with some orange marmalade, some chopped pistachios and some mint and enjoy !
