Health Rusks

Ingredients

  • 1 cup almond flour
  • 1 cup orgran gluten free flour
  • 1/2 cup rolled oats, gluten free
  • 1/2 cup dessicated coconut
  • 1/2 cup chopped almonds
  • 1/2 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup flaxseeds
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1/2 tsp ginger

 

  • 1/2 tsp ginger
  • 1/2 Tbs baking soda
  • 1/2 Tbs baking powder
  • 3 Tbs psyllium husk
  • 1/2 cup sugar
  • 1 cup water
  • 1/2 cup coconut yoghurt (1/4 cup yoghurt + 1/4 cup milk)
  • 1/2 cup coconut oil
  • 1 tsp vanilla essence
  • 2 eggs, beaten

Method

  1. Preheat the oven to 180°C. Mix all the ingredients together in a big bowl.
  2. Place mixture into a greased baking dish and bake for 45 minutes until golden brown.
  3. Allow to cool before slicing.
  4. Place slices on a baking tray or a wire rack in the warmer drawer for another 3 to 4 hours or in a very low oven for 2 hours then switch oven off and leave to cool.
  5. Increase the time if the rusks don’t dry out properly.
