Health Rusks

Ingredients
- 1 cup almond flour
- 1 cup orgran gluten free flour
- 1/2 cup rolled oats, gluten free
- 1/2 cup dessicated coconut
- 1/2 cup chopped almonds
- 1/2 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/4 cup flaxseeds
- 1 tsp cinnamon
- 1 tsp mixed spice
- 1/2 tsp ginger
- 1/2 tsp ginger
- 1/2 Tbs baking soda
- 1/2 Tbs baking powder
- 3 Tbs psyllium husk
- 1/2 cup sugar
- 1 cup water
- 1/2 cup coconut yoghurt (1/4 cup yoghurt + 1/4 cup milk)
- 1/2 cup coconut oil
- 1 tsp vanilla essence
- 2 eggs, beaten
Method
- Preheat the oven to 180°C. Mix all the ingredients together in a big bowl.
- Place mixture into a greased baking dish and bake for 45 minutes until golden brown.
- Allow to cool before slicing.
- Place slices on a baking tray or a wire rack in the warmer drawer for another 3 to 4 hours or in a very low oven for 2 hours then switch oven off and leave to cool.
- Increase the time if the rusks don’t dry out properly.
