Coffee-Caramel Banana Bread

Ingredients
- 2 cups all purpose flour ( I used a mix of 1 cup almond , 1/3 cup coconut & 3/4 cups Orgran Gluten Free Self Raising Flour)
- 3 mashed bananas
- 3 eggs (can also use Orgran No Egg Egg Replacer)
- 1 tbsp caramel essence
- 1/2 cup coconut oil
- pinch of salt
- 1/4 cup almond milk
- 1 tbsp baking powder
- chopped up pecans, almonds, macadamia nuts (optional)
- 1/2 cup rice malt syrup
- 1 tbsp coffee mixed in 4 tbsp warm water
Method
- Mix everything except the coffee & nuts in a blender
- stir through half the nuts into the mix
- pour half the batter into a lined loaf tin
- mix in the coffee mix into the remaining half of the batter – if it gets too wet, add 1 tbsp coconut flour to the batter
- add spoonful of the coffee batter to the tin loaf, and using a knife/skewer swirl to create a marble-like effect,
- add the remaining batter on top and sprinkle the other half of the nuts over the batter
- Bake in oven at 180c for 40-45 mins
- allow to cool on a cooling rack, and enjoy!
