Coffee-Caramel Banana Bread

Coffee-Caramel Banana Bread

Ingredients

  • 2 cups all purpose flour ( I used a mix of 1 cup almond , 1/3 cup coconut & 3/4 cups orgran gluten free self raising)
  • 3 mashed bananas
  • 3 eggs (can also use No Egg Egg Replacer)
  • 1 tbsp caramel essence
  • 1/2 cup coconut oil
  • pinch of salt
  • 1/4 cup almond milk
  • 1 tbsp baking powder
  • chopped up pecans, almonds, macadamia nuts (optional)
  • 1/2 cup rice malt syrup
  • 1 tbsp coffee mixed in 4 tbsp warm water

Method

  1. Mix everything except the coffee & nuts in a blender
  2. stir through half the nuts into the mix
  3. pour half the batter into a lined loaf tin
  4. mix in the coffee mix into the remaining half of the batter – if it gets too wet, add 1 tbsp coconut flour to the batter
  5. add spoonful of the coffee batter to the tin loaf, and using a knife/skewer swirl to create a marble-like effect,
  6. add the remaining batter on top and sprinkle the other half of the nuts over the batter
  7. Bake in oven at 180c for 40-45 mins
  8. allow to cool on a cooling rack, and enjoy!
